CLEAN EATING
This month, I decided to use what is in my garden and some of the beautiful Gluten Free pasta I found in my local deli. We love eating this recipe once a week.
ZUCCHINI AND mUSHROOM CREAMY PASTA
GLUTEN FREE& DAIRY FREE
ingredients
- 500 grams Gluten free pasta. (I purchased this in my deli, not the supermarket variety, but a local fresh one. I live in Western Victoria and love the brand Otway Pasta – you can purchase it on line)
- 2 teaspoons of vegetable bouillon – Use a powder from your local deli, many to choose from
- 1 cup chopped onion – Here I use cups rather than weight as it is easier
- 1 minced garlic clove
- 2 tablespoons oil (a neutral-tasting one for general cooking)
- 1 – 2 tablespoons of plain Gluten free flour
- 1 teaspoon salt
- ½ teaspoon paprika
- 2 cups of rough diced Zucchini – growing crazy in the garden!
- 1 Cup of rough diced Tomato – So much in the garden to choose…
- 1 cup sliced mushrooms (I purchased a grow your own box and wow I love it, so much fun just growing it and you can do it in any space at home. Fresh is best)
- 1¼ cups dairy-free cream, your local supermarket now has many brands. Loco is a good one
- 1 cup of Coconut yoghurt – Coyo is the better one I use
- Chopped parsley, for garnish (optional)
METHOD
- Brown the onion, garlic, in the oil.
- Add the flour, salt, paprika, and mushrooms to the pan.
- Cook for 2 minutes, stirring occasionally.
- Add the Zucchini and tomato, cook for another 2 minutes until firm but chewable.
- Add the dairy-free cream and simmer over low heat for up to 10 minutes, or until the sauce is thick.
- Keeping the heat on low, add the dairy-free yogurt and heat through. The yogurt might split, but it will still taste good.
- Begin boiling a pot of water for the noodles.
- Add the bouillon to the water.
- When the water boils, add the noodles, cook according to the package directions. (Usually 4 minutes).
- Drain the noodles and mix in the vegetable stew.
- Sprinkle with parsley, if desired.
- Enjoy, and refrigerate any leftovers.
If desired you can omit the cream and just serve the yoghurt, if you do then roll the yoghurt through the hot vegetable and serve immediately with a dairy free parmesan cheese.
Make sure you clean up with Pureworx, you will not believe how easy the fat dissolves after spraying and you can rinse in warm water, knowing all germs and grease are gone.
